A few years back my best friend and her husband moved in with us while they were moving into their new home. During that time she found she had Celiac’s Disease and I demanded the whole house go gluten free so she wouldn’t have to suffer watching us eat normal gluten-filled deliciousness.

Turns out the joke was on me because when they moved out and I tried to go back to gluten I got all kinds of sick and realized I probably should have been realizing my symptoms all along and cut gluten out years ago…BUT ALAS. Anywho, that’s why today’s recipe is made with a gluten free crust. You can totally use a regular one or a homemade pizza crust as well!
What kind of crust do I need for this bbq chicken pizza?
This recipe uses leftovers from the fridge to make something delicious and super easy for dinner. Some nights I don’t feel like cooking, on those nights Dustin cooks. On the nights when neither of us wants to cook…we’re in trouble!

BBQ chicken pizza night was one of those disaster-turned-awesome occasions. For this recipe I used gluten free cauliflower crusts that were frozen. I had them on hand to try out so it’s what I used. I won’t use them again, I’m linking to the crusts that I love and would recommend every day of the week.
That being said, you can use whatever kind of crust you like. If you are using a homemade crust or a crust that needs to be pre-baked, just do that before you add your toppings and bake!

I love these Schar gluten free crusts. They’re amazingly sturdy and they taste great. My husband has been known to pile these suckers up with all kinds of toppings and cheese. If he’s willing to eat them, you know they taste good even without the gluten 🙂
What you need to make this recipe for BBQ chicken pizza:
I made two pizza’s with this recipe so you can cut this in half if you just want to make one single pizza. They’re only slightly larger than personal pizzas though so this amount should be fine for a larger regular sized crust!
- 1 Cup Chopped Smoked Chicken
- 1/2 Cup BBQ Sauce (we used Sweet Baby Rays)
- 1 Cup Shredded Cheddar Cheese
- Seasonings, to taste (I added a little salt free table blend seasoning on top, Dustin added salt and pepper)

You can use regular chicken if you have it on hand. We have leftover smoked chicken breasts in the fridge. The smoked chicken breasts added a delicious flavor to this BBQ chicken pizza recipe!
How to make gluten free pizza with BBQ chicken:
- Prebake your crusts if they’re very thin, cauliflower, or raw dough. This step will make sure they’re ready for toppings and they bake evenly.
- After the crust is baked flip if possible so the unbaked side is facing down for the second trip into the oven.
- Add your BBQ sauce and spread it around. You only want a thin layer or it will be overwhelming and make your dough soggy!
- Add the chopped chicken. We kept ours in medium sized chunks so that it was a nice bite!
- Top with cheese. You can mix things up if you like. We used shredded cheddar. White or yellow cheddar will work for this recipe but the cheddar works best with the BBQ chicken flavor!
- Bake for 8-10 minuets at 350-375 F until everything is hot and bubbly and your crust is golden brown.
- Wait a few minutes for everything to cool down before you slice up your delicious pizza and dig in!
