Super Simple Taco Chicken Recipe

Today I'm sharing my super simple taco chicken recipe. Taco chicken is great for filling enchiladas, tacos, burritos, topping salads and more. You can't go wrong with this recipe for your Taco Tuesday celebrations!

  • 6 Chicken Breasts boneless skinless
  • 1 Pack Taco seasoning we use the great value brand from Walmart
  • 1 Cup Chicken Stock we use the leftover cooking liquid from the Instant Pot

Instructions

  • Place your raw boneless, skinless chicken breasts into the Instant Pot on the trivet. I use the metal trivet that came with the pressure cooker, you can use whatever you like to elevate them off the bottom of the Instant Pot.
  • Add about 1 - 1 1/5 cups of water to the Instant Pot so it can properly pressurize and operate. You'll need some of this liquid after the cooking process so don't worry, it's not too much water!
  • Place the lid on your Instant Pot and make sure it's in the locked position. Then set the valve to sealing so your Instant Pot can come to pressure and cook up these delicious taco chicken breasts.
  • This shredded fiesta chicken will need to cook for 20 minutes at high pressure. I used the manual setting. You can use the meat setting on your Instant Pot if you like. Either way it needs to be 20 minutes at high pressure.
  • I allow the taco chicken to do a natural pressure release for as long as possible. I usually give it at least 15 minutes. You can let it go all the way if you have time.
  • Once the pressure is released naturally for a bit, switch the valve to venting and allow all the pressure to release so the little peg drops and you can remove the lid.
  • Remove the chicken from the Instant Pot...good luck. It's super tender and will be falling apart...and place it into a bowl or your stand mixer.
  • Get 1 cup of the cooking liquid from the bottom of your Instant Pot and set it aside. Open your packet of taco seasoning and dup it into the cup with your cooking liquid. Stir to make sure there are no lumps.
  • Dump the taco seasoning mixture into the bowl with the chicken and shred it. You can shred it using the paddle attachment on your stand mixer or just use a hand mixer with the regular metal whisk attachments. Either way it's going to come out perfectly.
  • Once your chicken has reached the desired level of shredded you can stop mixing and serve it up however you like. We serve taco chicken in corn tortillas with fresh veggies, salsa, and sour cream!
