Smoked French Onion Soup | Smoked Vegetables

Making a smoked french onion soup is easy and delicious. Using smoked vegetables, smoked cheese, and an everything bagel on top. This is a fun twist on a classic recipe!

  • 2 Large White Onions Smoked
  • 2 Medium Red Onions Smoked
  • 6 Slices Swiss Cheese Smoked
  • 3 Everything Bagels Halved
  • 8 Cups Beef Broth
  • Salt & Pepper To Taste
  • 2 Tablespoon Olive Oil

Instructions

  • Chop and saute the onions until tender using the olive oil. Cook them in a large sauce pan so you can make the soup in one pot! If you have time you can fully caramelize the onions but if you are in a hurry they just need to be tender.
  • After the onions are finished cooking you can add the beef broth. Allow the onions and beef broth to simmer for at least 1 hour, longer if you have time. We usually do about 2 hours of simmer time to allow everything to really come together and become perfectly tender.
  • Preheat the oven to 350 degrees F and toast the bagel halves.
  • Transfer the soup into oven safe dishes. Leave enough room for the bagel and cheese on top!
  • Place the toasted bagels on top of the soup and then add the slices of smoked swiss. We used about three pieces of smoked swiss from a regular sized block. If you have larger sized blocks of smoked swiss you can use just one slice.
  • Place the oven safe bowls into the oven and bake for about 10 minutes or until the cheese is bubbly and slightly brown on top.
  • Remove from the oven and allow to cool...they will be HOT HOT HOT.
  • Serve with a sprinkle of herbs de provence if you are so inclined and enjoy.
